Canning Frozen salmon and Steelhead?

I have several fillets of fish that were vacuum packed in July and August. I need to make sure they don't go to waste so I am thinking of canning them. Any concerns or thoughts on this?

I have done lots of canning in the past but any good tips or receipts would be appreciated!

Please do not bash me for leaving it in the freezer so long, I have already lectured myself.

No problem with that at all. I do an annual cleaning out of the freezer, and anything approaching that vintage goes into the canner. Slabhunter's recommendation is a great one. Experiment with different sauces - you might be surprised.

I can into half pints, as they are just the right size for a lunchtime sandwich.

I have done sturgeon, halibut, various salmon, and tuna. It sure beats getting freezer burned and having to use as crab bait.
