Hey there...going to smoke some tuna tomorrow and was wondering if anyone has a few different recipes for flavoring in the jar? Have a great one with garlic..but not much else....thank you in advance!!!:help:

Smoke dry for 1 hr (2 panfuls) and then can with 2 jalapenos each jar. It is wonderful.

That depends on the size jar you use too. 1/2 pints you are probably better off with 1/2 to 1 jalapeno. But it sure is yummy. 1/2 of a canned chipotle is good too in 1/2 pints. Warm, but not overbearing.

we like to can it with a table spoon of Italian seasoning, or a table spoon of taco seasoning, also all that has been listed before. though tuna you can't do it wrong it is all good

Dry brined a loin last night and smoked it up for 2 hours at 200 using one pan of Apple.

1 cup Brown sugar
little less than a 1/4 cup salt
1 tsp Garlic Powder
1/2 tsp Cayenne
1/2 tsp dry mustard
1/2 tsp white pepper

Cut into medallions after it was smoked and servered with garlic herb smear from Noah's Bagel - on assorted crackers. Also dipped some in soy and wassabi.

Next time I'd cut loin into medallions then brine
