Does anyone have a preference for which wood to smoke sturgeon with? Normally, I use Alder. I was lucky enough to fish with David Johnson (ifish guide)yesterday. It was a great day of fishing. The boat landed over thirty sub-legals and five keepers. Hence the question.

I will post pictures later when I figure it out. You cannot find a better guide or person to fish with for the day than David.

I like apple wood with mine. It's just a tab bit sweeter.

We always use apple. If you want a little milder flavor, go with the apple. If you like stronger smoke flavor, go with hickory or alder. Just my .02!!

For sturgeon the brine I use is:
1/3 cup salt
1 cup brown sugar
1 quart water

I always add a little Liquid Smoke.

Also, if you use Morton's Tender Quick instead of Salt it seems to taste better.
I think Tender quick is pulverized salt. You don't need to use as much as regular salt.

Try it... You'll like it... :wink:

Ditto on the Mortons TenderQuick. That's what I meant when I said salt!!

If you want a dependable and quick brine that works very well use Scotty's Brine Mix. I have tried a number of recipes and it is always a matter of taste but Scotty's works very well. You can get it just about anwhere. Fishermans, G I Joes, Fred Meyer etc
