I have some very nice Hali I caught off the coast of Vancouver island and would like to try some smoked. But as it is like gold out here I am afraid of ruining it and wasting a beautiful (and expensive lol) piece of white meat. Has anyone tried this? Can I follow the same methods as smoking salmon? Cook times, temps, brines, etc?

Try “Halibut Olympia” instead. Sounds odd but it works.

I’ve not had good luck smoking halibut, it dries it out and makes it too chewy as they have little oil.
I still have not tried it so thanks for the heads up. I think I will pass on smoking and definitely going to try the halibut Olympia!
