For steelead I freeze the finished product in a vacuum bag, THEN seal so they don't pop and it works great.

My question is this...

I have about 15 jars of wet cured eggs for salmon. Can I just put the jars in the freezer (there is a little "air" room for expansion) or do I need to put them in vacuum bags and do them the same way I do it for steelies???

OR...

Is there yet another method I haven't thought of. Looking for ideas.

use the jars and fill within 1/2 inch of top.
add some wax paper and burn it while putting on the lid creating a vacuum. This WILL NOT affect the eggs scent or cure. :cheers:
