Found it...
As I suspected it was simple, press the reset button with a DVD in the player, and then immediately press and hold the start button on a controller. Resets it to normal mode.
Whats the difference with progressive scan anyway?

Progressive scan "draws" every line as the picture is displayed. Interlaced scan "draws" every other line, then fills in the blank lines on a second pass. So progressive scan is able to display the picture twice as fast resulting in no scan lines, a sharper picture, and less flicker.
You need a digital tv to take advantage of it though. On a standard analog tv, it won't make any difference.
