hey we had an excellent day at billy chinook caught a bunch of 12-14" kokes. would like any input for a good brine. thanks.

1 c. salt
1 c. brown sugar
1/4 c. soy sauce
1/4 c. white wine

smoke with alder&apple

soy sauce
brown sugar
salt (not too much)
dash of liquid smoke
strawberry jam, raspberry jam (pick one)
dash of worchester
pepper
minced garlic
Marinated for 1-2 hours. Dry off fillets

smoke in alder chips
I call it kokanee Kandy!

:smile: we anchored up where the metolious runs into the lake and casted!! wedding rings tipped with magic white shoepeg corn, me and buddy cuaght almost 40 kokes and one 26" bull trout that i promptly released. alot of fun on four pound test!! :cheers:
