I saw this recipe on TV last night and it sounds really good. Has anyone tried this or a variation of it? I hope I remembered everything.

Salmon cakes-
2lbs Fresh Salmon cut in to 1/2" cubes
1c white bread crumbs
1-2 egg whites
2tbs mayonnaise
lime juice from half a lime
1-2 chilis (Jalepeno/Cerrano)sliced thin
Shredded Cilantro (to taste)
2 cloves garlic, minced
2 shallots, minced

Saute the chilis, cilantro, garlic, and shallots in good olive oil until the warmed through. Mix the salmon, bread crumbs, egg whites, mayo, and lime juice in a bowl. Once the chilis, garlic, etc... have cooled, add them to the salmon mixture. Form cakes from the mixture and fry in olive oil for 3-4 minutes on each side. Plate and drizzle sauce over the top, garnish with fresh slice green onion.

Sauce-
1/4c Oyster sauce
1/4c Soy sauce
Brown sugar to taste

Mix together and heat until brown sugar is disolved.

The only thing that bothered me about the show was the Atlanta fish monger that passed Atlantic Salmon off as Columbia River Chinook.
