I am including one of the first links I came upon after a google search for "butchering beef, cuts".
I label mine similarly to beef,and this link shows the main cuts from an animal, in this case a deer. I find that beef, deer, and elk all have similar cuts.
Bone it all out. You can get some great steaks and roasts out of the hind quarters. Make steaks out of the backstrap and tenderloin. Grind the rest up and make burger. Cody
