Decided dad was time to use a Pork Butt I got on sale. Split in to two recipes. First was Al Pastor. Welded up a couple of plates with a 1/4” aluminum rod to stack on. Worked well.
other half was a Cuban Pork Mojo marinated half, including the meaty bone.
