Default Summer Sausage Gone Wrong

So, I made some Summer Sausage out of 4 1/2# pork and 3 1/2# goose. Used a commercial product for the cure from BiMart. Yes, I used the correct ratio according to the package. Came out way too salty. Am going to try and save it by using it in Chili, tacos, etc. Any great ideas?

Yep. If it begins to wrinkle, the sausage has been in the water long enough.

Most of those pre-mixes have way too much salt. It doesn't take much "cure" (pink salt) to do the curing. Try using a lot less of the mix or get a real sausage making book and make your own "mix". Good summer sausage is a challenge, getting the "tang" is tough to do in small batches.

I use Morton's Tender Quick for lots of stuff which allows a person to add their own salt and spices to taste. Yes, it does contain some salt to begin with but not like the Bimart product. The extra salt (filler) is to make it look like a person is getting more for their money but it does nothing that contributes to the actual curing process.


There are a couple professional curing product outlets in the metro area that would have a better product. Could probably find some recipe's on-line to make your own cure and spice mixture.

That special salt, like sea salt is some potent stuff.
Wifey has some Himalayan pink salt, that got me good, the first time I used it.
WAY saltier than your ordinary Morton's table salt.
Luckily I wasn't using it on an expensive steak or roast.
Scrumpled eggs are cheap.

Tender Quick is not table salt. It contains salt, sugar, 0.5% Sodium Nitrate, 0.5% Sodium Nitrite, Propylene Glycol.


Himalayan Pink Salt is table salt and not the same as the pink salt previously mentioned. The pink salt is either Sodium Nitrate or Sodium Nitrite or both, with a dye added for identification and precise measuring.

Regarding trying to save it.
Pasta salad. You will not notice how salty it is in it.
Other options are in other dishes where you can substitute other sausage for it, that has a low percentage of meat to other ingredients ratio.
Cheese and crackers- slice it very thin. Serve as appetizers with alcohol if that is an option😏

Regarding your commercial product.
Did you use the entire pack, or the correct amount of tablespoons per lb? I’ve had issues with using less than the entire pack.
Ive made quite a bit of goose sausage with less than what you used as pork and it turned out great. And I mean no one can tell it is goose or beef product.

And my personal opinion is the stuff BiMart and Sportmans sells is not as good as other commercial or home made options.

I always take a small amount and fry it in a skillet before stuffing and smoking. You don't get quite the same taste as when smoked, but you get a true taste of the saltiness. I started doing this after some bacon came out like a salt lick. With pork bellies I soak in cold water. With sausage I'll add more meat if it's to salty.
