Today seemed like a good day for some carnitas. Need something to overpower the smoke smell in the house. Just got the crock pot started.

Oh ya we had plenty of crispy edges. 7 minutes under the broiler, stir, and then 5 more minutes.

I reserve the broth and add a pack of ramen noodles and whatever meat is left on day 2 or 3.

Just made some with an insta pot for quickness... best yet. I took about 3 lbs down to the fire station for they guys working OT to cover shifts for they guys who are mobilized on the fires.
The citrus really popped and had just a touch of spice.

In addition to the recipe below I rub with my pork rub and smoke for 2 hours. Then into the insta pot and 80min later onto a cookie sheet under the broiler to crisp up.

* 3 lbs boneless pork shoulder, trimmed of excess fat
* 3⁄4 cup low sodium chicken broth
* 3⁄4 cup fresh orange juice
* 3 tablespoons fresh lime juice
* 2 teaspoons salt (to taste)
* 1 teaspoon fresh ground black pepper
* 2 teaspoons ground cumin
* 2 teaspoons dried Mexican oregano
* 1 teaspoon ground coriander
* 1 teaspoon dried ancho chile powder
* 1⁄4 teaspoon cayenne pepper to 1/2 tsp cayenne pepper
* 1 small yellow onion, chopped
* 6 garlic cloves, minced
* 1 1⁄2 tablespoons vegetable oil
* warmed corn tortilla, diced onion, cilantro, crumbled cotija cheese

I've followed the original recipe pretty close, but I've been using either Root beer or Cream soda in place of the cola and playing with different spice blends.
