Default Which Tastes better, salmon or halibut?

Since there is a halibut thread this PM, I thought I would ask. :smile:

Fresh Alaska halibut filets grilled over mesquite with a little lemon juice gets my vote!

I fish Alaska also and a fresh grilled Red Salmon is awfully close. But, I do have a definite taste for those fresh halibut fillets.

Tough Call...but after a lengthy session the jury has returned the verdict:

1. Fresh Alaskan Sockeye filets barbecued on tin foil with lemon pepper and basted with butter

2. Halibut filets baked with mayonaisse, green onions, and sprinkled with bread crumbs and grated Parmesan cheese

Salmon on the grill with Costcos lemmon pepper and butter on it as you grill is hard to beat. By the way sprinkle the seasoning on the fillet before you vac pak

My preference is halibut. Wife loves it and our six-year-old sucks it up.

Heres a great way to cook it.

1 cup flour
1 1/2 tsp. salt
2 egg whites
2tsp olive oil
1 cup of beer
2 lbs of halibut in cubes
2" cubes
oil for frying

Mix flour, salt, oil and beer and let rest for half an hour. When ready to fry, heat oil to 375 degrees. Beat egg whites to firm peaks and gently fold into flour batter. Dip fish in batter and then fry in hot oil, a few pieces at a time. When golden brown, remove cubes from oil and lay on paper towels. Salt and serve hot.

Try a piece 'til you know you have the right temp. Do not rush it.

Believe me man this is a super recipe. :smile:

If the fish tastes "fishy", get it away from me [img]graemlins/berry.gif[/img] I love the sport but not most of the meat. I do love smoked Salmon and Halibut Fish and chips Now that is gooood eats.

How can there be any question. Halibut all the way. Silvers are next followed by spring chinook and then winter steelhead. Fall chinook are what I tend to give to "friends"

A fresh Copper River Salmon filet, grilled on a barbeque on top of soaked cedar planks basted with lemon, brown sugar and butter! You will never forget the first bite, totally awesome. The cedar plank method kicks the flavor of any salmon up quite of few notches.

Halibut tacos, smoked red salmon, BBQ tuna, coho, steelhead, sturgeon and chinook. That's my order of preference.

Tuna!! Smoked, fried, bbq'ed, broiled or baked
Salmon! smoked, bbq'ed or broiled

I know tuna wasn't one of the choices, but if you've never
eaten fresh TUNA, you haven't really eaten fish! ... 'course,
I may be a bit jaded in my thinking because of all the fresh/frozen
salmon I've eaten for the last 50 years!

Oh, the question was Halibut or Salmon. Mmmm... Fresh halibut grilled with onions, lemon and garlic. Salmon, smeared with a little mayo and seared with a torch served on a pat of rice with wasabi and sweet soy sauce. Tough decision which is better.

Tuna takes 1st prize, though. It is good any which way it is prepared.

Sturgeon probably comes in second as a very versitile fish. Next keeper gets made into tacos.

Steelhead. Ling cod. Tuna. these are, in my opinion, the best eat'n fish we got here. Salmon is good too, but smoked is the best after you get tired of fresh stuff. BUT, spring chinook smoked rules!

If we're talking fish on their own. Springer or Sockey in Bob's Olympic Salmon Steaks recipe.

However If you've got fresh crab, and fresh Halibut, crab stuffed halibut is pretty much the best eats I've ever had.

Everyone is right! Let's just combine it all:

All fresh, in late July halibut season:

Take one boneless ocean king salmon fillet & lay it out. Put the following on it: strips of halibut, strips of tuna belly meat, strips of lingcod, & crab meat. Smear & sprinkle butter, lemon, pepper, & everything mentioned except the mayo (ugh!). Add strips of half-cooked smoked bacon. Splash on some tequila (for the tunaholics). Roll the thing up like a cinnamon roll, and skewer it to keep it together. Barbeque it slowly, so it is crispy on the outside and just a little raw on the inside for the sashimi nuts. Call it the "i-fish combo".

Rogue River springer if it's caught anywhere downstream of Gold ray Dam. Ling cod is next for me, but I have never had FRESH Halibut! Sure would like to try some though.........

BBQ'D Springer all the way if I am going to eat Salmon. Don't eat much anymore, burnt out on it. Now if you want good fish, Ahi or Mahi Mahi get my vote :smile:

Firedog, You are correct. My definition of medium rare is redder than most. As long is it warm I really don't care how red it is.
