How timely of a thread! I have a freezer dying that I defrosted and took stock of food this weekend. (Luckily I have more freezers) and now the bottom fish closure looming, and I am pretty low on bottom fish and tuna.

With that said I decided to try tacos made with ground beef from the store. I haven't done that in a few years, and let me tell you, yuck!!! Dog ate it though. If it wasn't for the garden veggies on it it would have gone straight to the trash and dog dish, what do they put in supermarket hamburger? It's just not good at all.

I think this weekend will be either a serious look at tuna and or bottom fish. And with venison getting low, I may have to get a quarter or side of beef again since I'm not hunting this year. Hafta get the freezer fixed or another first. Otherwise I'll go with salmon, halibut, catfish, shrimp or something else in the next tacos.

Spaghetti with homemade sauce my daughter has been canning for the last two days. Moose steaks with sliced tomatoes and cottage cheese the night before. Fresh black sea bass and sliced tomatoes night before that. Maybe BLTs tomorrow night.

Maybe one less tomato plant next year in the garden. Love this time of year!

Pulled pork spaghetti tonight, but yesterday was fresh garden gazpacho with spotted shrimp toppings. Next up is smoked coho chowder! Love our cornucopia of wild foods we have to choose from. Chanterelles very soon !!!

Just got done grilling up 20 ribeye steaks for the crew, with sides of mac n cheese, potato salad, beans, and slaw from Hop N' Grape.

Eating 2016 venison jerky smoked in teriyaki sauce. Also 2016 canned tuna mixed in ramen noodles. With pepper. Lots of pepper.

Crumble about a pound of smoked salmon.
Finely dice a half of a sweet onion
Half pound of cream cheese
4 table spoons of sour cream
A dash of sirachi hot sauce or more depending on if you want it spicy hot
Pinch of salt

Blend all ingredients and place in a shallow bowl then top with chopped chives or the green ends of a few green onions for appearance
Spread on small chunks of sourdough bread and enjoy

Dang I need to go to the store and get some of the ingredients so I can make some.
Salmon is in the smoker now

My salmon spread is similar to Hanks, I use mayo instead of sour cream. I also add dried tomato flakes. Sometimes a shot of lemon juice and dill is good also.

Tonight I cooked pork chops and Normandie vegetables for my hunting buddies here in Wyoming. We had some smoked tuna belly for appetizer.

Taking the horses in to pack out another bull in the morning.

Just couldn't resist. Saturday's tuna seared with avocado/mango/black bean salsa and wasabi/soy dip. So good it's silly! Merlow now, 8 second later. Mmmmm.

Tonight was panko halibut spot prawns w cajun spice seared then hit w olive oil sun dried tomato salad dressing. Fried green tomatoes and a green salad.

Good friends Laurence and Tanis coming over for dinner tomorrow night, for critters that were swimming around yesterday

Dungeness Crab bisque starter. Secret ingredients are half a can of tomato paste to add color, body and flavor, 3/4 teaspoon of Old Bay seasoning, and 3/4 teaspoon of cayenne pepper to spice it up just a bit. Double the recommended amount of crab to 1-pound.

Same old same old
Ate way too much though and it's keeping me awake

Extra sourdough bread, smeared with butter, Tillamook cheddar cheese, and as much crab meat as you can get to stay between the slices.
Toasted in the fry pan on low heat about 4 minutes on each side until cheese is melted and bread is golden brown and some lemon pepper halibut on the side

Nice, fresh apple pie and razors!

I played around with spices and settled on Maple syrup, sesame oil, soy, fresh ginger, chili paste, garlic salt, and cilantro for a rub. Then bacon wrapped and coated in pride of the west, then pan fried in peanut oil. The maple syrup for the sweetness offset the spice and went excellent with the bacon that was crispy and complimented the seared tuna perfectly. I think this just passed tuna bombs for my favorite tuna. Served on spicy yakisoba noodles.

Couple of nights ago, but still. Venison tenderloin, calves liver, uncured Hempler's bacon, and sauteed sweet onions (gotta have a veggie in there somewhere). Oh, yeah, and some top shelf beer.

Sorry, I meant to add "<------ This is sarcasm." to the end of my post. It was leftover from a dinner, purchased for a friend who drinks ONLY Bud. Sad, yes...but "free" when i was loading my cooler for hunt camp.

Hey fyshndad...you and I have the same great taste in fast food. That's my goto for quick dinner except with salmon. My wife doesn't like to give me credit for cooking dinner, cause I make it too fast...lol.

A few selections from the past few months, showcasing a summer of cheap paper plates and ridiculously good food, including albacore nigiri sushi with homemade ponzu, spicy tuna roles, blackened salmon caesar, blackened salmon fettucine with castelveltrano olives, peppers and veggies,

and finally a new recipe for us: mongolian salmon. Super easy. Salt it, cube it, liberally coat in corn starch, brown the outside, heat up a sauce of 1:1:1 soy/water/sugar with as much ginger, red pepper flakes and garlic as you like. Toss the fish in for 45 seconds or so until the sauce thickens and boom!

That's some killer looking chow there Mattig! I'm gonna have to try that last salmon dish.

I just threw some crab in with spaghetti. Make your normal spaghetti with meat and sauce and just add a bunch of picked crab, it's really good and will be a good use for that canned crab I've got.
