I just got a old freezer,the older the better (less plastic) gutted it, used some of the racks for the smoker racks and added a few more, I use 2 coffee cans with briquets for heat and add chips to that. Can generally smoke about 50lbs of fish at a time or 15 pounds of jerky. Just make sure you get all the plastic out including the door seal, It will get enough air thru the cracks to keep from smothering the heat.

I use an old frig with a metal interior, you don't want to use frig racks as they are cadnium coated. Oven racks are stainless steel. I had the local appliance store order me a replacement Bradley burner unit, I couldn't get enought heat out of a hot plate. I smoked about 60lb of salmon the other day.

The smoker that I built will smoke about 80 to 90 Lbs of filets at a time. My digital camera is broke or I would post pictures for you. I have a small wood stove buried in the ground and about a ten foot section of stove pipe going slightly up hill to my smoker. I own a metal shop so I built my box out of metal but I don’t know why you couldn’t build one out of wood. Some people use old refrigerators but who want’s an old piece of junk beside your house. Another thing that people use is metal garbage cans. Once you have had cold smoked fish you will NEVER be able to go back.

find a old refer or fridge that is metal inside, cut a 4" hole at the top put a 4" stove pipe in and add a damper,
take a heat vent the adjustable kind and put that down at the bottom on the side, get 2x2 cedar boards and screw to the sides and get expanded metal to place on top,make sure the metal is cleaned if possible blast it first then spray both sides with pam cooking spray.

in the top section cut the 2x2 so there are half moons on top and you can place dowls across to smoke sausage or hang fish,
get a thermostat out of a old electric dryer and place the prob through the wall and put it about in the middle of where the racks are.
place the adjuster inside a junction box on the outside of the fridge and wire that into a switchbox that has a plug in.
get like a double burner electric cooking setup to put inside on the bottom.
you will need a thermomitor .you could find one of those digital oven type with the log wire and probe and run that through the side wall about same height as the thermostat
ok you can smoke a mass amount of fish or watever you want in this, what you get is air circulating thoughout smoker with the flue at top and vent on bottom ,once you get it dailed in you can maintain a even tempature with thermostat and venting , smoke fish for a longer time at a lower heat, youll have great results. i did untill the wife made me get ride of it she said it was a eye sore :grin:
