Default elk loaf

I've yet to bag an elk.....but I do get some twice removed kickdowns each year. What do you guys do with all that burger? I just made some elk loaf with my mother's meatloaf recipe. Pretty good......(Mom doesn't lurk). Anyone have some elk burger recipes they want to share?

We use elk burger for pretty much anything we'd use regular beef burger on...

Tacos
Spaghetti
Meatloaf
etc, etc, etc

Typically, elk burger is a tad dry compared to beef because it's so low in fat content. You might add beef sewit (sp). If you do, I'd recommend 1 lb. of sewit to 10 lbs of elk grind.
What ever you do, don't try to use elk fat.......ewwww!

If you feel the flavor's a little strong (gamey), add some garlic. I typically use garlic salt in place of regular salt with venison anyway.

I'm with MY....pass the garlic salt

Elk stroganoff is good too...burger or thin cut steak works great

Maybe I'm in the minority but I much prefer a good cheeseburger made with elk over beef.

Also try sticking your burgers in the smoker for a pan of chips before you BBQ them...

My wife is not crazy about the taste of elk but I found that if I mixed it half and half with beef (in meatloaf or burgers) she usually couldn't tell the difference. I used much of it that way, often without the her knowledge. I also take it when I go camping. I think it makes awesome taco meat too.
