What cuts? Moose should be treated the same as elk, don't over cook it.

The moose I've eaten has been pretty similar to elk - not too gamey tasting and overall pretty good. To repeat....dont overcook

Boiled moose: Boil one medium sized moose...invite a LOT of friends over for dinner.

Seriously...moose is IMHO the best of the best game meat. In all of the moose that I butchered, I never found a roast (too dry) all I could find were steaks (YUMM) and trimmings for hamburger. Mix 15% beef fat in with the hamburger for juiciness and to hold it together when cooking.

One of my families favorite ways to eat it was swiss steak cooked in the crock pot. Makes me want to to shoot another moose about 3 miles back in a swamp and then spend 2 days packing it out.

Here's a good one for any of the chewier parts (or not- My brother likes it so well he'll even use backstrap):

Cut steaks into serving pieces, roll in seasoned flour.
Brown meat in skillet with 2-3 tablespoons of garlic seasoned oil.
Reduce heat, pour in 1 can Golden mushroom soup (condensed), half can of water, one can of mushroom pieces(drained), one medium onion, halved then sliced.

Allow to simmer, stirring occasionally -- 30 - 60 minutes -- depends on thickness and quality of the meat ( make sure the onion is cooked completely). Meat will be fork tender.

Add boiled baby red potatoes or mashed pots if so inclined as a side dish for the resulting gravy.

I have tried this on most game -- the only time I found it lacking was on a really fat young antelope that had eaten alfalfa and wheat all of it's short life.

Thanks everyone for the help. I have a package thawing out for the stove top and one for the smoker. I've never eatin' moose but all I've heard so far was good reports. I will try to remember it's just a large elk but as the grantspastor was saying (two days packing) it will be a little hard. I'll let ya know how the first timer does. Thanks again and if ya ever get the chance to look down the barrel at one make sure the freezer is empty and your tummy is growling it makes all the work after the shot worth all the effort.
