Default Venison food handling

Intersting publication from the University of Minnesota Extension Service published in October, 2003 on venison handling/preparation/storage.

That's a great link! Thanks for sharing that. I would be curious to know from what region they have identified parasites and particular strains of E.Coli. Also, what species of animals were studied. I'm sure that, like heart worm in dogs, certain types of organisms are prevelant in certain geographical areas. I wonder if there has been any such studies on Oregon Muleys or Blacktail. I've eaten wild game my whole life and have never gotten ill from it. (Knock on wood).

Thanks again.

Thanks for the link. Very useful... all except that part about "left-over" venison. Never heard of it nor seen it.
