Default What do you do with the brisket?

On deer-size animals the brisket can be pretty thin, and I usually just clean it up and throw it in the burger/sausage/pepperoni pile. I can imagine this cut is more substantial on an elk or a moose. What are some other uses for this cut? Can you leave it in the rib cage and make "venison ribs?"

FB, venison ribs are great! I trim mine using a sawsall, then boil them and then place them on the bbq with Bullseye. Try them, I'm sure you will like them......
