Do you make your own Pepperoni?

I would like to know how you make your own pepperoni. I make my own jerky using a food de-hydrator, I only use elk meat for that. But I've never made my own pepperoni. I've had the sausage kitchen and white's meat make it from the deer and elk I bring in, both who do great work, But it's so expensive! I have a big chief smoker, is this adequate? Please share your recipes and techniques, I'd sure like to give it a try.

I take mine over to the Alicks Sausage kitchen. They are not the fastest. However i know they are using my meat, and they make great hamburger as well. I also eat lunch there alot. They make great salmon sandwiches.

Gene's meat market in Mehama has the absolute best. Those guys have won many awards for their meats and sausages. They make a great jalapeno summer sausage..

i make tons of it, you really need to be set up to do it right.... infact i threw away tons of it trying to figure it out,,, took me a year and half to get it down, threw research and trial and error i have what i think is the best around,

Fishstik, do you use beef or pork fat? I have been experimenting for a couple of years now with mixed results. The seasoning I like the best is "Eldons" that can be found by searching the web

sr1 5, actually pork butt is used, you need a fat content in the meat mix for pepperoni, eldons is great,, i cant think of the lady who owns it (cathy??) anyway she is super helpfull and full of info, i use my own seasonings..
