Default Looking for smoked sturgon recipe

Hey fellow ifishers, looking for a recipe to smoke sturgon. Smoked a lot of salmon, but never sturgon. Have bought it over at the coast and it was good, but tasted like a very different brine was used. Any help would be greatly appriciated.

I do this:

1/2 cup brown sugar
1/4 cup kosher salt
1 clove fresh garlic
1 quart distilled or spring water

Blend on high until the garlic clove is pulverized.
Put in a heavy duty gallon sized zip lock bag.
Put as many sturgeon pieces in as can fit without packing.
Make sure all the air is out.
Put in the refrigerator overnight.
Rinse the next morning and let air dry for at least 1 hour.
Smoke as usual.
After smoking put on a rack in a roaster pan.
Put about 1 quart of water in the pan.
Steam in the oven on 350 degrees for 20 minutes.
Let cool and refrigerate...ENJOY

Do a search on the Ifish cooking page... I know Big Brights smoked sturg is the only I ever tasted that I liked... you should try it!

I tried this last year and it was very good just soak it in yoshedas gormet sauce for 8-12 hrs and smoke it. I thought it was very good.

I like the Yoshida's too. I add a pureed onion to it.

Most any smoking brine will work just pick one you like. Sturgeon takes on salt realy well. You need to use about 1/4 the salt you would for salmon. Best probably to do small batches and do a little testing or use a tried and true recipe.
