Top is covered in a thin layer of my secret sauce:
Mayo
Crumbled blue cheese
Salt
Pepper
Garlic
Fine chopped onions
Dash of Liquid Smoke.
Combine and mix until it tastes "right". Spread on the fish, Put in screaming hot bbq (keep mine 500 degrees +). As soon as the meat BARELY seperates in the thickest part with a fork, pull it and let sit on the counter for at least 5 minutes. The mayo spread seals in the juice pretty well, and adds great flavor. I don't recommend for springers as it is pretty rich, and a fatty springer is already rich enough!!
As for the bottom tray, my buddy did that, lots of cajun spice and garlic butter, but he cooked it WAY too long, it was very dry (but tasty). My entire tray was gone, his was barely picked over.
