Default Try this

This is what it says. Its really good I think. About one of the best ways that I have found to cook a duck other then the old cedar plank one.

Saute: 1 cup Onions finely chopped, and
1 cup Tomatoes in small dice, with
1 tsp. Salt
1 tsp. Curry Powder (optional)
1/2 tsp. Crushed Red Pepper (optional) in
5 Tbs. Oil or Margarine until soft.

Add one duck. Make sure you cut the duck into small pieces. Like no less then 12.

Then Saute the duck lightly for 2 or 3 minutes.
Then it says to Cover and simmer for 30 minutes or bake at 350' until duck is tender and done.

I just simmered it over the oven till it was done and the meat was cooked.

That sounds good! I have a real simple way to cook duck & goose... I cut the breat(s) into strips or chunks & roll them in a mix of flour, Mrs. Dahses & seasoning salt. My oh my, it's good. I don't want nobdy there but me!!! Sometimes I add parsley flakes, just for fun.

Here's another one:

First thing that I've found is preparation is everything. I breast out the duck as soon as possible and then soak in salt water for a couple days, cycling the water periodically (helps take the gaminess out).

Cut the duck breast in half the thin way (like a butterfly, but complete). Marinate in a soy-sauce/BBQ/brown sugar type mix for a day or so. I'll place onion and celery on one side curling the duck around, wrap some bacon on the outside and pin with a toothpick. BBQ!!! Awesome, you’ll love it!
