Duck' O' Roni - Help?

I Decided to save a bunch of my duck to make in to Ducko'Roni this year. Sooooo where do you guys take it to have it done? my butcher that I usually use for deer etc... . "doesn't do duck" as he put it.

Otto's in Portland did mine last year.I turned out well,however I would ask him to make it at least 25% fat.It was a little too lean.

I have taken one bear to Gartner's in Portland. Both the pepperoni and the summer sausage were great.

Both Gartners and Sausage Kitchen do a good job.

Gartners let me cool an elk in their cooler, hard service to find, brought in in on a Sunday (August) I remember those things.
