1. Never eat fresh sturgeon, treat it like a deer or elk and let it sit for a few days
2. Soak in whole milk for 24-48 hrs
3. Cut into cooking size pieces (before or after the milk bath)
4. Vaccume seal. Will last for 8-12 months, but in my freezer this is the go to meat, so not an issue.
5. Cook fast and hot, do not overcook.
