Default Vacuum Packing Elk Jerky?

Anybody tried vacuum packing jerky for long term storage in the fridge? I don't like to put it in ziplock bags due to moisture problems. I'm thinking vacuum packed would be alright though.

Any opinions?

I have done both peperoni and jerky vacum packed in the freezer for over a year with no problem.

Just like w/ everything thing else i seem to try w/ my vac-pac - it works like a charm.... I'd suggest wrapping it w/ a few layers of plastic wrap first. I do this w/ any meats i put up, and it stays fresh considerably longer.

Thanks for the input.

I figured that's the best bet. I have had my best luck keeping smoked fish that was vac packed.

If you are interested in a great jerky recipe try this one. It is from my Big Chief book. It is mighty tasty!

-8 lbs. elk strips
-1/4 cup salt
-1/3 cup sugar
-1 cup red wine
-2 cups soy sauce
-1 cup water
-1/2 tsp. onion powder
-1/2 tsp. pepper
-1/2 tsp. garlic powder
-1/2 tsp. tabasco sauce
-smoke with hickory chips
