After posting a question about how guys on this board cook their Duck, I've come to realize there's a lot of non eaters out there. So what do you guys that hunt a lot do with your Birds? :whazzup:

We save all of the duck and goose meat shot during the season and get pepperoni and Kilbasa sausages made at Ken Warner's in Tillamook. Its awesome ! Best way to eat duck or goose.

A non-hunting friend likes to eat ducks about once a year and his wife welcomes them guts, feathers and all. They like mallards.

Once I took about 10 misc. ducks down to "Felony Flats" in Eugene and gave them to some Mexican gentlemen waiting to catch a freight train. They were all smiles once they figured out I wanted to GIVE them the "patos". :smile:

Usually, my hunting partners & I save 'em up and have a big duck feast on superbowl sunday.

Suggestion for the non eaters: I called a local food bank and a shelter in Vancouver and they welcomed them, all I wanted to give them. I suggested that I could have the meat inspected at a meat shop before dropping off seven birds. The cook there loves duck so he welcomed them. I wanted to share them and see if there was a way to do that.

If we don't tell them how, they will all stop hunting ducks. Hmmmmmmmm
just forgot the whole recipe book. Those nasty old yuckie tasting things. Besides they might have to go out in the rain and might get wet or catch a cold. Besides that, there are lots of leaves they could rake or watch the blazers.

Cause my dog would rather fetch the real thing. Been bred for 400 years to do just that. It would be cruel to not kill a few for him.If you don't want to kill ducks, buy an ankle biter dog, not a lab. For all the joy it brings us, I'll eat a duck. Now this weekend we are going goose hunting. The dog will stay home( sometimes he gets excited and flares the thousand birds working the dekes.I can't blame for being excited, but I will not ruin the hunt for others.)and pout. It's not like I hate the stuff. The duckeroni is my favorite. But deer or turkery puts it in it's place.

FF,
My lab would just about break your leg with his tail just thinking about hunting waterfoul. One time my brother wing tiped a big honker and Willy, my lab, went out about 200 yards and got it. On the way back he would let out a yip and drop the goose about every 20' as the goose bit him :shocked: . Sure miss that dog. :depressed:

Wife can't stand it. I could go either way. Jake here however loves Pintail with Garlic-Orange Suace. So we eat together and the wife eyeballs us.

Everyone else, yeah steel sucks past 35 yards or so. But the smell of rotting cattails sure beats the Seahawks any day.

The way my Hunting partner and I shoot, it is pretty safe for the Ducks :smile: Luckily he loves to eat duscks so I don't have to worry about eating them. My lab would be heart broken if we didn't get out. She is 11 now and after cancer surgery and Salmon poisioning this year she has slowed down a bit but not much.

Okay, I will give you my secret recipe for what I call Chinese Duck Upchuck, or sweet and sour duck.

Soak meet in salt water for several hours to draw out blood. Cut into bite size chunks.
Roll in flour or coat with batter mix and fry until golden brown.

In another pan or wok cook veggies (I like carrot, celery, waterchestnuts, pea pods, bean sprouts, almonds in any combination or all together.)

When veggies are done to desired tenderness drain off any water, and then add meat. Mix Yoshidas sweet and sour sauce, soy sauce, garlic salt and pepper to taste. (when all mixed together should resemble upchuck)

Pour upchuck on top of rice, yakisobi noodles, or those crunchy chow mein noodles.

Cook them in a pot of homemade spaghetti sauce. Then it's just meat. The duck flavor is gone.

Amen, Flatfish, about life being too short to be without a lab. Even in college I looked for courses that said, "Lab required." :grin:

Who cares how duck tastes. I've got to be out on the marsh watching my dog work. I'd eat mud before I'd give up doing that.

Part of why I don't do it anymore. I would eat what I shot, but didn't particularly enjoy it.

Spaghetti was OK, some crock pot concoctions turned out fine. Mallard and pintails were pretty decent, but I usually managed to knock down widgeons instead (yuck).

Oh, lost a tooth to a piece of steel too....another reason to quit......

that and I don't live in Hermiston anymore!!

Well it makes the best jerky, better than beef. I save it up until I get a smoker load or two and make up a good brine. When it’s done, it doesn’t last two days.
