My DULL Knives!!!!!
I can't spend another evening trying to get my knives sharp again. Ive been using the tripple stone and only make them more dull.
Days of practice don't seem to be helping.
Any suggestions besides having them sharpened at a place other than home?
May sound funny, but is there classes on sharpening knives????

tyee-fisher, I gave up and got a GATCO sharpener. It has three stones and a clamp thing for the knife with a guide on it and works great. Got mine from cabellas last year. My dad could always get an edge on a knife no matter how bad it started out but not me i needed some help and thiw thing works great.

Thank's for the tip. I will check out cabells for that. It's funny, I was gonna mention in my first post that I was convinced my father was the only person I knew who could sharpen a knife. Must be a Dad thing!!!! Thanks for the lead, TYEE-FISHER

I have the Lansky set. I was told that someone who had worked at Lansky designed the Gatco set which has several improvements over the Lansky. They are also available at Freddie's, by the few fishing/hunting theings they carry, frequently on sale for $20-25. Follow the instructions and you'll be an "expert" in no time.
In case it's not obvious I'd get the Gatco over the Lansky.

I also have a GATCO, that is about wore out. When I replace it I am going with the Diamond stones over the standard stones. Also get the handle that wither mounts on the table oor you can hold. make sit much easier. Overall great sharpeners.

I have had a Gatco sharpener for about 5 years now and would highly recommend it.
If I were to get another I would get the 5 stonr set with the diamond stones in it. With the larger set you can even sharpen serrated knives.

I couldn't sharpen a thing until an Alaskan guide showed me how to sharpen some of my knives with the Gatco. Now all the guys line up at camp to use mine. Just a tip, when using it though, when you start with a new blade for the fist time, start with the extra coarse stone to start a fresh angle.

I have trouble believing this thread :depressed:
My 14 year old daughter can sharpen a knife with a stone (not a Gerber knife).
This is not an insult or a slam but anyone can be taught how to use a stone.
Consistant angle is critical. Stainless steel doesn't make good blades and I only have SS blades on my fish knives. Get a good carbon steel blade and have someone show you how to sharpen it.

its simple to sharpen a knife with a stone, you need to keep the stone clean, after it fills up with metal take some soap and water and a small brush and clean it, also you need to start with atleast one good side of the blade so hold the knife at about 40 degees and work one side in circular motions until you can feel a burr all the way along the opisite side of the blade, it may take awhile if the blade is screwed up, you can feel the burr with your finger and when you can feel it the whole length of the blade turn it over and do the same thing to the other side, when you can feel a burr the whole length of it that means you have 2 sides of the blade that have no gap in between them, now go back to the other side and go over it but with alot less pressure, then do the other side with alot less pressure, its kinda hard to explain but the burr must be used as a starting point or you will be there for a year and go nowhere

The most important thing is to keep it sharp. If you let it get real dull it is a pain. Its a lot easier to touch it up a litte at a time then a whole bunch at once.

I started using Firestone sharpeners. They are the best thing...well...since sliced bread. They have a broadhear remover so i assume they were developed for bow hunters. Easy, compact and quick. Swipe it a few times between filets or while skining or gutting and it's right back to razor sharp.

Wow, talk about flying steel!! Can't believe how fast he sharpens them. I watched him fillet some fish once. That was just as scary :shocked:

I suck at sharpening [img]graemlins/berry.gif[/img] always have and occassionally I have to reconvince myself, then I grab my lanskey kit. I do know that Huey and Sons (knife shop) at Washington Square will sharpen knives. They chare a couple bucks and you can get it done while you shop...shop....did I say shop...not me,,,,uh go to sears and get some man stuff

I can barely sharpen a @#$%^&* pencil so after reading this thread I ran over to Freddy's and scored a Gatco. Tried it out tonite for the first time on an old crappy kitchen knife and whaddya know, it actually works! Thanx for the tip, everybody :smile: :smile: I have enough dull knives piled up to keep me busy for a week
springer_97011, you might check Fred Meyer for the stones. I didn't see your post before I went over there so I didn't check to see if they had them (specifically) but I'm fairly sure I saw them there. But don't quote me on that. I have a long-term case of short-term memory loss.  Not to mention I've been known to hallucinate on occasion.

I don't know about Gatco Sharpeners, never used one but I cook for a living and have a knife in my hand at least 4 hours a day. I suck at keeping knifes sharp. I've sent them out to get sharpened, used stones followed by a steel and always get it about 1/2 the way to sharp. A friend of mine just gave me an Accu Sharp. 11 bucks. I'm not sure where he got it but I would try Bi Mart. It has a two rerversibale diamond stones in it and when they are used up on one side, you can rerverse them and start another life of the tool. My knifes are as sharp or sharper then at any point of there lifes. Even knifes that have been dull forever. Wustof, Henkel, Gerber, and Mundial. Cleavers, slicers, fliet, 12,10,8 inch knifes razor sharp. I have yet to cut myself with my knew equipment. Guess I'd better watch myself today.

Take a black permanent marker and color the edge of the blade, take note on whether or not the edge is 2 sided. Start sharpening (my favorite are the ceramic sticks) when the blackened area is clean, the knife will be fairly sharp, then do a couple of more swipes for good measure. I haven't made hamburger out of my fish fillets for years using this method.
