2-4 boneless, skinless White Gold fillet pieces, in portions.
Mix a half and half combination of dried bread crumbs and grated parmesan cheese in dish #1. I add some fresh black pepper and garlic powder to this.
Beat two eggs with a little milk for an egg wash in dish #2.
About a 1/2 cup of flour in dish #3.
Dredge halibut piece in flour on both sides, then into egg wash on both sides, and finally into the crumb mix on both sides. Put onto a clean plate. Repeat for all pieces.
This is my set up.
Grill fish over medium heat in real butter until golden brown on both sides.
