Default Taco Soup

This is a very simple recipe that is fast and very good!

*1lb Hamburger
*1 med. chopped onion
*1 can stewed tomatoes (16oz)
*1 can kidney bean (16oz)
*1 can corn with liquid (16oz)
*1 can tomato sauce (8oz)
*1 pkg. spicy taco seasoning

>>>Brown hamburger and onion; drain. In a large pot,add all ingredients and bring to a boil, cover and simmer 15 minutes.
>>>To serve, top with shredded cheese, sour cream, and taco chips.Add hot sauce of your choice if desired.

This makes a awesome camping meal or can be heated up on a propane stove out in the boat!

Cut plain corn tortillas into wedges and brown in oven @ 400 for 10 min (or done to your liking).......then you have a low fat alternative to regular chips. With very lean hamburger in the soup and low fat sour cream you have a great nutritous meal :smile:

That is so good! Travis of Fins Feathers and furs wife made it for me twice when I was sick!

Here is Fins Feathers and Furs rendition that was made for us when I was sick.

1 can family size Campbell's Veggie Beef Soup
1 can family size Campbell's tomato soup
1 Lb hamburger
1 med. Size onion
1 large can Red Kidney Beans (drained well)
1 package of frozen corn or 2 drained cans (I use frozen)

Salt and Pepper to season
Chili powder to taste (several shakes)
Taco Seasoning (I put about 1/2 of a small package)

Corn chips
Sour cream
Grated Cheese

Brown hamburger and add chopped up onion.
Add both family size soups without adding any water
Stir in drained Kidney beans and corn
Season to taste with the sat, pepper, chili powder and maybe taco season if you like it.
Serve with crunched up chips (FRITOS!) on top along with sour cream and grated cheese.

YUM!
