GBS's vundabah chicken wings
After making a post on the main board about eating wings and watching football today, some of you wanted the recipe, so here is is. By the way, you make these puppies, and they
will come!
Couple of packs of thawed chicken wings or drumsticks for you health nuts.
Clean and dry and lay into a glass backing dish. If you have
one that's teflon, even better. The pan will get sticky and dirty.
sprinkle some cajun seasoning over the wings, lightly.
put into a 325 oven for 5 minutes.
While they pre-cook, make up the sauce.
1 cup catalina dressing
1-2 tablespoons minced garlic.
4 tablespoons of hot pepper sauce, like tabasco or sim. more or less depending on how hot your brand it is to the taste.
teaspoon black pepper
3 tablespoons honey
a few roasted hot red pepper flakes.
3 tablespoons melted butter.
Take out the chicken after 5 minutes and baste the meat well with sauce, then back into the oven for 10 minutes.
Then remove, turn, and baste over sides. Return to oven for 10 minutes. Remove, turn, and baste again, this time adding the pan dripping as a baste addition. Return for a few more minutes, or until they are appearing done. The secrete is to baste often to create the coating.
Lastly, turn the oven to high and broil just long enough that the top of the wings browns and bubbles a bit.
Remove, turn all wings into the cooked sauce, and let sit to cool for 5-7 minutes.
Serve with some blue cheese and celery, and of course your favorite brew.

you can mke them as spicy as you want. They will have a sweetness to them, the spice kicks in afterwards. If hot is not your thing, add less hot sauce, or use a sauce that's mild.

enjoy! They are goooooood! Just make sure you sample the sauce as you mix in the hot stuff, as everybody will use something different., and remember, baste,baste,and baste!

Where do you buy the small chicken wings? They don't have them anywhere at Gresham Fred Meyers. Do any of the other chains carry them?

I made these for a church lunch last Sunday. They were GONE in record time and a couple of the younger guys were mopping up the pan drippings with bread!

This recipe will never grow old (like football), it's a classic!
Be sure to have a roll of paper towels handy to wipe off your fingers after you lick them.
Otherwise just wear an old pair of pants! :grin:

Have mercy, they're as good as they look!
By the way, not being a fan of a lot of heat, I used two tablespoons of McIlhenny's green jalapeno Tabasco as well as a dozen drips of the red. I would definitely step up the heat a bit more next time.

glad they are a hit. I have also put a spin on them by adding a few tablespoons of heinz 57 steak sauce to the mix. Gives it an even richer flavor.
I also found some wing sauce at the dollar store and have been adding a little of that too.
I plan to make a bunch for superbowl sunday and my birthday.

Oh my goodness. We just made the sauce and are ready to start basting the wings. That is the best sauce I have ever tasted! Can't wait for the wings to be ready!

I tried a spin on them yesterday. added some sauce and olive oil to a pan and pan seared the wings first, tossing and frying in a pan, just till the the skins are browned. then bake with the sauce on broil till the sauce bubbles and browns. turn and repeat, keep basting. YUM!

Tried them on a traeger today. They were a BIG hit!
I cooked them @ 250 turning and basting about every half hour
until done.
My B-I-L (BTW he's an eater) said the best he's ever had.
