Need a new smoker
I've used a Little Chief for years, and with winter here its taking forever for my salmon to finish. I don't like to finish my fish in the oven,so I'm looking for a smoker with a little more oomph!
The Brinkmans and Char-broils have elements of 1500 watts. They are very similar in design. Is one of these better than the other?

Re: Need a new smoker
I've had trouble with my Big Chief from the get go. My problem is the power plug shorting out or getting hot, either way the plastic plug on the power cord melts. The first time it did this it took out the element and the cord. Second time it was the plug only, third time it was plug and element again. This is after 10 loads of fish, not a good track record in my book. Saw the stainless propane one at Costco, looks bad to the bone for $200.

Re: Need a new smoker
I gotta say that I am totally impressed by our new Traeger pellet-fed unit. A great BBQ, and an unbelievable smoker. Plug it in, select the heat setting (high, low and intermittent smoke), and walk away. It is especially impressive on the "smoke" setting. We are very happy customers.

Re: Need a new smoker
I have a Big Chief and I have used it 5 times. It is not worth the lousy $70 bucks I paid for it.
The power cord began to melt from the get-go and this time I had to stop the smoking process and take the plug out and carve it back to practicaly no insulation just to keep it from burning up.
Also, the rack frame they provide could not be any more flimsy. The slider guides have begun to detach from the frame and I have those wired up but that only works part of the time. Darn near spilled a fresh load of salmon on the driveway this weekend beacuse of it.
Man, what a piece of junk. I'm looking for a new smoker....

Re: Need a new smoker
I have used a Little Chief for around 20-25 years, however long they have been out. I solved the problem of not enough heating by building an insulated box around it from one inch foil backed foam house insulation. Works great even in below freezing temperatures. With that said I bought a gas smoker for the capacity. I have a Little Chief for free if anyone needs one.

Re: Need a new smoker
Problem with the Little Chief is the Heat. I always used to Smoke in the Box. The idea of an insulating box is good. I have also seen some of the New units at the Sportsman's Shows last year. They look really nice and if I was looking at a purchase I'd consider waiting for the shows. If not I would see if they are going to offer any sales in the near future. They really get competative at the show's lately. Good luck.
