One more chanterelle thread.......
A heads up for all you chanterelle fans- I picked chanterelles the last couple of weeks and they are still out there. But with cooler nights the chants are going to all shrivel and get punky.So go get "em for a Thanksgiving Day dish!
Which brings me, selfishly, to my question -if you had a bunch of chanterelles what would you prepare for a Thanksgiving Day dish? Recipies would be great. Thanks!

I miss picking chanterelle's I used to live not to far from belfiar wash, and picked every year. Now i live in Eastern oregon, i do pick morells, But unlike chanterelle's these can get buggy unless you pick early, Shrooming is a Blast, Laters...

I went out last Saturday and managed to find a picnic basket full. We found quite a bit but not in very good condition but like Jim said they are still out there.
Now for his questions.
I would definatley use them in the gravy for a rich mushroom turkey based gravy. My mouth is watering just thinking about it. Also I would would put them in the stuffing mix and saute them when you saute the celery and onioins. Hope this helps.
Last picking we did we made a crab bisque that is just out of this world and a chinese sir fry. MMMmmmm Good.

I truley ROCKED the Chicken Chanterelle soup tonight!!
First time eating Chanterelle's and i can definately understand the Excitement in making something really delicious. Like my soup was
Sorry no recipee, I cook by taste ,never use recipee's .
Could probably use Turkey ?

Hey bro .. I found that pocket knife you let me use the day we went picking. How do I get it back to you.
BTW .. the saute and freeze method gets very high marks. You may have changed my attitude about spaghetti and a jar of sauce being a 'Last chance to avoid grocery shopping' kind of meal. Add about 4 ounces of chopped, sauteed chanterelles and the sauce is pretty dang good.

I went out to do a little scouting yesterday (11-18) and a lady stopped me about four miles in on a logging road. There were two pickers with five gal. buckets full, and had locked their keys in their van. Long story short I skipped scouting and hauled these shivering ladies and five buckets to Hillboro. They had the back of the van full also.
Bottom line, they had "buckets" full, felt like wet sponges though.

I made big scores while up Elk hunting this last week along with bears tooth but they will be going away over the next few day's. It's been an exceptional year for us.

Went out today; the earlier rains and the freezing cold have made them mush. Only found a few worth keeping and those are getting immediate attention to dry them out.
