Default How do you store your smoked salmon?

I was wondering what the best way to store smoked salmon. I know that you can vaccum pack it and freeze it for longer term storage but what about the ones that you will eat over the next week. I put some in a ziplock and put it in the fridge but after a few days there was moisture in it. Not sure if that's the best way.

I vacuum pack some and can some, my favorite is smoked 3 hours then canned with fresh garlic and jalapeno pepers. Good smoked fish starts out with fresh chrome fish, not boots!!

If i'm not going to eat or use it right away, vacuum pack and freeze it is.

I just vacume package mine (with the food saver pro)and I have stored it up to a year in the refer and it has been as good as the day I packaged it.

If you are going to store it in the fridge to eat in the next days, do not put in plastic. Put it in a paper bag you get from the grocery store, or at the very least, put paper towels in a zip lock.
It just keeps better in paper.

I doubt it's spoiled unless you really didn't smoke it long enough. Lasts at least a week if smoked properly but it shouldn't be hangin' aorund that long if it's good!

I like to both vacuum pack and can, different taste, both are good.

I find it is better to freeze it first, then when I want some, I take it out and brine and smoke it. I use a little less salt on prev frozen fish than my normal recipe.

Jen is right on on the paper bag thing. I think smoked salmon is tops about the second or third day after being smoked. JMHO :smile:

I'm living by myself right now so I do a whole normal batch, keep out what I think I'll eat within a few days, and throw the rest in a ziplock in the freezer. I eat a couple of pieces every day in my lunch and so it doesn't have a chance to get wrecked in there because it's never frozen more than a couple weeks.

I like to can my fish. Canned fish doesn't require refridgeration therefore it doesn't take up valuable freezer or refer space, It's ready to eat, just pop the top and chow down, as previous respondee wrote can fresh smoked fish for best flavor. I do just smoke fish and eat it, It never seems to be around long though. I need at least 100 Lbs. of fish to fill the smoker I have. I brine the fish in 5 gallon buckets, and smoke lightly like
tipndwater said, my brine mixture is 1/2 cup dark brown sugar, 1/4 cup non iodized salt, 1/4 cup white sugar, mix all ingredients in quart jar half full of hot water "to disolve salt and sugar" then top off with cold water and stir some more, pour in on filleted fish, make as many jars of brine as necessary to cover fish, you must stir fish in brine occasionally, about every 3 hours, the low salt content of this brine allows for longer brining times 12 to 36 hrs. I hate salt kippered smoked fish. :tongue:

KISS brine:

1 gallon water
1 cup of salt
1 cup of sugar
1 cup of brown sugar

Brine 24 hours

Smoke 1-3 hours

Pressure can in pint mason jars @ 10 PSI for 1 hour 40 minutes.

Makes great gifts!!!

Cant get any easier than that.

I use a precise mathematical formula at my house:

The number of years since Dad last caught a salmon, minus the number of hungry mouths at my house, plus the brine time, multiplied by the distance at which you can smell the smoker working.

Storage? What the heck is storage? :grin:

I put mine in brine for 24 hrs. Smoke it for a few hrs depends on quantity I am smoking. Bring it in the house, put it on a plate, then clean the smoker up. When I turn around it has usually vanished :shocked: wife and kids come out of wood work, :smile: I can load the smoker down and it only lasts 24-36 hrs they love it when I smoke fish. Never have any to take on the next fishing adventure :depressed: oh well still do it anyway :grin:
