Default How to store eggs?

I have been vaccum packing my eggs. I just started curing eggs last year. I have seen people store them in mason jars. How do you pack them inside the jar? And do you need to put them in the freezer after they or can they sit on the shelf? Or should I stick to vaccum packing them or is there another method?

Vac pack is fine. We vac pack them into the jars using the attachment on the vac packer. The old way is to put a peice of wax paper in the jar, light it on fire and then screw on the lid.

In the jar they can be refrigerated or frozen. I freeze mine if keeping them until next spring.

My experience with vac. packers is that you need to be kinda careful about how much air to suck out. You don't want much, if any, air in with your eggs as this is where they will show freezer burn, but if you try to 'suck' them too long, you can cause the eggs to collapse. Then when they are thawed, they are real mushy. Maybe this is just my bad experience, but I know of at least one other person who has experienced the same thing. It works though, good luck! :grin:

I vac pac all my eggs. Maybe pack borax around the eggs and it won't pop the eggs.

If you vac pack in bags put the eggs in the bags in the freezer for a little while open and let them harden a little then vac them, works great.

I freeze mine in mason jars. While curing, I retain some of the juice before it is re-absorbed. I then freeze the eggs, then open the jar and pour some of the juice over the top to protect the top layer from freezer burn. Works great.

I vacumme pac my eggs in jars also. I have put them in bags but found i sometimes applied to much suction and popped the eggs, I start with mine in qrt jars and freeze them. When I thaw them I take what i don't use put it into smaller jelly jars and vacumme them and just keep them in the frig. They last for months.
