Default Refrigerating cured roe...freezing necessary?

Ive searched past topics and seems cured roe needs to be freezed if not used soon...But ive had a friend who has refrigerated his Nook eggs and left it refrigerated one year and caught fish on em next season...Wet cured also..

He even swears the eggs stay good sitting in jar outside in room temp for months at a time..??

I have a quart jar of ammerman steelhead roe, decided to freeze the whole jar, but how can I use only portions now that its frozen..without having to thaw it all and refreeze it all again..

I truly wish there were a way to just keep it fridged and thats it.

Any suggestions/opinions about freezing welcome please.

Use more smaller jars - like pints instead of quarts. Freeze the eggs in the size jars you normally use in a day or two of fishing.

They'll last at least a month in the fridge.

A friend of mine takes one day's worth, and double wraps it in saran wrap, then double wraps that in newspaper, with one more saran wrapping. Says it stays in great shape for one year or so.

I had some eggs that I cured up a LONG time ago. I never used eggs much until this last fall Chinook season other than for steelhead. I cured the eggs and kept them in the fridge for about 9 months :shocked: . I then froze them (food saver bags) for a little over a year. I was going to throw them away but thawed them out just to see what kind of shape they were in. I was shocked as they looked GREAT but what did I know I didnt even fish for salmon with eggs. Didnt even bobber fish for Salmon. [img]graemlins/dork.gif[/img] . This last fall I went out with Ryan (Wilamett River Outlaw)and took some of these eggs along as well as some fresh from this season cured eggs. Needless to say they fished GREAT under a bobber!!! I caught more fish on those eggs this last season than any other bait. We (Ryan, my Father, and myself) landed MANY fish within the next 2 weeks on the eggs I was going to toss. While the other eggs caught some fish too they didnt even compare to the old eggs. :whazzup: Ryan and I had one day (my first time bobber fishing) that we really got into a crazy bite. my old eggs would get bit almost every cast while the other "fresher" eggs wouldnt get touched. I dont think I will toss any "old eggs" again until I have tryed them out on some fish.

I now watch my eggs close to make sure no mold forms but still dont freeze them right away. I keep them in the fridge all season. If they mold they get tossed. When the season was over they went into the freezer.

JMHO but Im still VERY new to bobber fishing so what do I know?

Good post. I never froze my first set of eggs and they seemed fine. I froze the second set - definitely lost texture (kinda gooey) when thawed. Both fished the same (neither has produced). Still a lot to learn on this one.

I use amermans eggs and cure my own. Even if I buy eggs i vaccume seal the qrt jar. taking the air out I think keeps then from getting burned. Then when i thaw the jar i seperate them out into smaller jelly jars and vaccume them. the one I'm not using and keep it in the frig. I've never had any trouble with spoilage..

This may be a dumb question but how can you tell when eggs go bad? I've tossed eggs that had been around a while but they never seem to go sour or anything.

I had a sandwich baggy of about a handfull of eggscured up with amermans that sat in the the refrig for at least 3 months. They were rock hard. Lastweek I gave them to my brother as a joke. Long and behold he used them the next day and caught a steelhead with them. If I didnt see it myself I wouldnt have believed it.

My theory is, if corkies, jensen eggs etc work effectively, then why not cured egg's no matter what condition...as long as they dont put out a bad rotten scent...

but then again who knows the rotten scent might even work.

Like I mentioned a buddy of mine had a quart of wet cured eggs jarred and carried them in his truck unfridged all season and still hammered the fall nooks bobber fishing em.

I dont know if anyone would have scientific pinpoint answers to this??

I posted this topic because I am skeptical about freezing a whole quart of eggs and having them turn "Mushy", would be much easier just to fridge in a vaccum jar and use.

Jon,

Don't toss eggs because they start getting mold. Put them in the freezer. The mold will come off on the first cast, if it's not too bad.

Personally, I think curing, then freezing is the way to go. Then you don't have to worry. All my eggs are below zero right now!

And I think they fish better after curing and freezing.
