Default How a fish is hooked?

I've noticed that when I'm boondogin, the fish seem to hook in the side of the mouth. We were out bobber and jig fishing the other day, and I noticed they were hooked in the roof of the mouth.
Has anyone else noticed this pattern? I've never landed a steelhead drift fishing and wonder how they would hook? Does the way they hook transpose to the feel on the rod? Any insight would be greatly appreciated.
