I have salt, pro-cure and prawns....now what?
Happy Holidays. I got a new vacuum packer for Christmas and I have nothing to seal up. Sooooo...I thought I would cure up some prawn tails. I am in Alaska and have no fish, meat or eggs to play with so I thought some shrimp would work out.
I have some non-iodised salt, pro-cure Hott Stuff and Wizard cures and some prawns from the deli.
What I was thinking of was taking the a quart of water, mixing in 1/2 cup of salt and 1/2 cup of pro-cure for a brine and then add some raw shrimp. Let the shrimp sit in the brine for about 24-48 hours and then pull them out and dry them a little. Put them in jars with about 1/2" pro-cure bait oil and then sealing them up for the spring.
Should I use the shrimp raw or cook them (no garlic and butter jokes please)? :smile:
Should I let the shrimp sit in the brine longer then 24 hours?
Does the ingredients for the brine sound good?
Any other suggestions that work?

I plan on doing some for myself, Springers are right around the corner. I was talking to an old flatulant on the river the other day.... He says to do them raw...Non-iodized salt...whichever dye you prefer and he used some oil..i think he said that he was gonna used mineral oil next time but it was kinda expensive for doing prawns. I would drain them well before using that new vacuum packer..don't want to suck up too much of that color through that bag  This guy used them for springers from the bank..plunk'n with spin'n glows. He catches fish.

JUST A HINT USE COOKED PRAWNS THEY WILL ROTT ON YOU IF YOU DONT I CURE 100S OF POUNDS OF PRAWNS FOR SPRING YOU NEED MORE SALT AND :shocked: YOU CAN PM ME FOR THE REST IF YOU WANT

Scotty...if i cook them... they ain't bait no mo :tongue: I would thunk that they would stay in a more "natural" state uncooked. Hmmmm...I guess i'll have to try that too. Thanks Mr. Bent :smile:

Cook them and cool them.
While they are cooling make a sea salt brine with bottled water (has never touched fluoride or chlorine) strong enough that no more salt will suspend in the water. Add bait dye to the brine.
Put the prawns in jars then fill with the brine and screw the lids on. Leave in the fridge until they are the color you want. Drain them until dry, put in wide mouth pint jars, add scent or whatever goodies you like, and seal with your handy new vacuum sealer. Seems to keep in fridge a long time or can be frozen.
Thats my basic process. Maybe one of the "pros" will part with their secret process and sauce. Dont see why not...its just prawns not a patentable cure for cancer :smile:

no its much more important than a cure for cancer :grin:
Dork in a raw form they will not absorb what they need to im not saying raw prawns wont work
