Default Smoker Chips

I realized after reading the label on the Lurh/Jenson chips that most have some alder chips in the mixture. So when you buy Hichory, Apple, mesquite or Cherry you get a mixture of alder Chips with every flavor. When you buy Alder chips you get 100% kiln dried Alder. Initially my intuition led me to believe alder would be too bland for salmon and smoking in general, but after doing several batches of smoked salmon, I've discovered alder has a very rich and smokey flavor and can be used just fine by itself.

For Salmon, I use pure alder, it's the best (for me anyway)!

The Native Americans had 10k plus years to figure out the best wood to smoke salmon with. I'am in total agreement. I've got 40# in the Big Chief as we speak.

I just finished Mom's Christmas present. All done with alder. She loves her smoked salmon.

I stick pretty much to Alder for fish and fowl, Hickory for pork and beef and Mesquite for beef brisket.

Like GBS said, I like about a 60/40 Alder, Apple mix. Very mild but still Smokeeeee!!!!
