Default CR Sushi?

How's that sound for an idea? I just read in the thread "first steelhead" about a guy having sushi steelhead from the umpqua. I know not ALL sushi is actually raw fish, but I guess I'm assuming this was? Would people recommend eating raw fish from the columbia? Seems like cooking it would be a better idea. I know dad has told me stories about some "old-timers" lopping off a chunk while fishing at the coast cleaning fish and eating it, but seems like even an ocean fish would be a little different than one that had been hanging out in the CR for the last couple weeks? Just wonderin, thanks.

Ask The Fishing Geek. Every time he catches a fish on the CR he takes a big bite of it raw. It's like some kind of primal fishing thing. Does not seem to mess him up in any way. In fact his brother does it too.

Thanks to crashin bait I'm thinking we can now consider this thread closed, at least as far as I'm concerned, that's enough to convince me.

I don't see why you couldn't eat a CR salmon or steelhead raw, as long as they're bright and fresh!

The actual obstacle may be your own immune system and not the fish.

FYI. For those out there that care. Sashimi is raw fish. Sushi in a ball of rice and something else in combination, just about anything you want will do. So sashimi is to sushi what cheese is to a pizza. later....

Thanks salmurai, I knew that not all sushi was raw fish, but now when I go out with my sushi enthusiast girlfriend I can sound real smart like! I'm still having mixed feelings, I usually am not too worried about things like this, in moderation, that worm thing is the one getting to me. Tight lines, if they bite... bite back?

I concur with Duckie. Most saltchuck fish are ok. I just can't get myself to eat raw halibut after seeing all those parasites in the flesh.

What duckie said.

I cook for a living, and Japanese cooking (or lack of) is my main focus.

My understanding is that sashimi, at least as is served in the Northwest, has been flash-frozen to minus-20f, for so many minutes to kill all parasites.

I'll occassionally have a very thin slice of raw ocean caught chinook - but I don't think it's a good idea.

I would err to the side of caution. Fish used for sashimi are directly caught from the saltwater. You never see bass, walleye, catfish sashimi.

Fish in freshwater systems...lakes, rivers, etc have a bacteria (can't remember the name) that will make you very sick if eaten raw. Fish that migrate from the salt to fresh water systems (i.e. salmon, steelhead, sturgeon) pick up this bacteria.

It's ok, if you caught your salmon out in the coast/ocean. But once they enter the freshwater systems, you need to be weary.
