Glass in my tuna? No it's struvite.

Now that's a hunk of struvite. I've seen tiny ones but that's got to be a 10 carat version. See if you can sell it on ebay as a organic diamond.

We had a couple of cans with these particles in the last two years. I thought it was un-desolved salt that got encapsulated in the olive oil that got put in last over the salt keeping it from desolving.

I had a few small granules in some half-pints I canned. Unfortunately I threw out a couple of jars worth before I figured out what was going on.
