It was great meeting you and Shaun (Shawn) Saturday. I guess I know I'm getting old when I enjoy the people I meet more than the fishing adventure, even when I manage to catch a fish. You say the river was good, did you manage a hatchery fish to the bank, or more of those pesky natives?
Oh by the way, that Salmon Manicotti recipe I mentioned was our family favorite. I'll read it from the actual recipe book (with my 'improvements' included).
10 manicotti shells, cooked according to the package directions
2 cups cooked flaked salmon (you can cook it any way you want, poach, oven, barbeque)
1 cup grated cheddar cheese
1 cup grated mozzarella cheese
1 tsp. lemon juice
6 tbs. sour cream
1 cup chopped onion
jar of marinara or spagettie sause
in large bowl, mix all ingredients except the manicotti shells (of course) and marinara sauce.
stuff shells with mixed ingredients and put in baking pan
cover with marinara sause,
bake 350 degrees for 20 minutes.
For a more appealing visual, you can sprinkle a bit more cheese over the sauce before baking, gives a pizza like look. This is one recipe that people have raved about, recommend it highly.
