Default Diamond Steel from George and Sons Cutlery

As I discussed in my post on Fillet Knives, I visited George and Sons Cutlery, downtown Portland, this weekend and got a great education about fillet knives and sharpening systems.

After reviewing several different options for sharpening stones and steels (including japanese stones), I purchased their 10" oval diamond impregnated steel. Price is $29.90 for a 10" and $34.95 for 12". Very impressive. Feels different than any steel I have ever used and it sharpens knives fast (in fact, they advise that you be careful with the number of strokes you use).

I called George and Sons to get a product name or website. Evidently, this is a special purchase they get directly from a nationally known dealer in Germany. Contact them to purchase. Worth the trip.

I've been in the market for a new fillet knife so I followed your lead and ordered a Big Eddy II from AG Russell. Looks like a great blade..... Can't wait to get it and use it on a bright finless metalhead..... :grin:

Tim: No problem. In fact, I have been doing some research on Columbia River Knives. So far, rather impressive. I am looking at some of their hunting knives, especially the Alaska Skinner #2004. Looks like an awesome knife for skinning deer and elk.
