Crab Cooking Spices
Although I am not an expert on this I will post the spices we recently used when cooking cleaned crab. I received several e-mail asking for this information, thus this thread. The spices we used were given to me by someone who uses them often . I also hope others will post their spices and sources for all to try and enjoy.

Old Bay 'One Step' crab and shrimp boil. In a net bag, comes in a yellow and blue box at Albertsons fish counter, $1.29.
Use 2 and don't forget a little cider vinegar.
Zaterains is good too.

My absolute favorite is Louisiana Fish Fry Products Crawfish, Crab & Shrimp boil. Loose powder in a bright yellow bag. Unfortunately, I cannot find it anywhere locally.

Another vote for pickling spices in a net bag. Usually always eat crab cold but with this spice combination, eating the crab hot right out of the pot is delicious :grin:

I'm telling you boys that you got to quit boiling your crabs. I always have but this last trip I was convinced to steam them rather than boiling. WOW! No comparison. Way better. The body meat is fantastic and you don't have all the water in your legs. Steam for 15 mins. and you'll never boil again.

Don't know how you guys do it, but ssteaming is the best. 15 minutes seems to do the trick. way better than boiling. Don't know how you would incorporate the spices.

Given that my father is cajun and we grew up on fresh fish and crab ... up here, got to add the vote to the Louisana Fish Fry product ... Crab/Shrimp Boil. I have seen it from time to time at Zupan's and Albertson's ... I think there is a web page and you can order it. They also have a simple mix for jumbalya and etouffe that is real good. In a pinch, Zatarain's is good and pretty common to find around here. The whole steaming thing is interesting and I'm sure delicious BUT after thinking about what is in our local water, especially the quality of the water in Tillamook bay (20,000 dairy cows produce how much feces/urine each day?), I go with a long boil.

We always use crab boil.
We also add some potatoes (cajun boiled potatoes mmmm mmmm), onions and a few lemons to the salt water when bioiling.
Crab legs sure are good hot out of the cooker.
