Default Ever fished Florida?

I'm going to Fort Lauderdale on Dec. 8 for a week. Some friends set me up to do a day with a guide in the Everglades (10,000 Islands) fishing for snook and redfish.
I'd like to have some other options besides commercial tourism while I'm there, though? I've been to the Keys, but it was spring break and there was plenty of things to see and do besides fishing. The Rumrunners on a spring break night is like an alien nation filled with Florida college students and Mardi Gras participants.
Its definitely not Pacific Northwest anadromous, but it should be exciting nevertheless.

I've fished the flats several times and have always enjoyed the trip.

I have fished out of Islamarda with several different captains. The flats for snook, redfish, jacks, baby tarpin, etc. can be a day to remember. (Don't forget the bonefish if you have the time.
