Default Storing smoked salmon

I have two nice salmon filets smoked up and ready to eat. I plan on having one for Thanksgiving and would like to save the other one for Christmas. Unfortunately, I don't have a vacuum-packer, just a freezer. Does anyone know the best way to save the other filet until Christmas? Fridge? Freezer? Best way to wrap it? I think it might mold by Christmas if in the fridge and it might freezer burn if frozen until then.

Run it down to Sausage Kitchen and get it vac packed there. It would only coast ya a couple of bucks at the most.

I would think that if you just put it into a freezer bag it would be ok. But like David Johnson said, take it in.
And like what I'm going to say, take it in and get them to bag it for you. It will trun out so much better and stay longer and better.

I've never tried this but it sounds good in theory.

Use freezer bags and a straw. Zip up the freezer bag enough to only allow enough room for the straw in the corner. Use lung power to suck all the air out, pinching off the straw if you need more than one breath. When your all done pinch off the bag over the straw, while pulling the straw out. Snap shut the last 1/4" of the zipper instantly. Should work?

The Sausage Kitchen is about a mile north of Fishermen's on the left.

The straw method works but not as good as a real vac packer.

I think you should first follow David Johnson's suggestion to have it bagged but then ask Santa's helpers for a Foodsaver vacuum sealer for Christmas. You will not have to worry about storing and freezing your fish and eggs again. Ask for one with a jar sealer.

What about canning smoked fish? How do you do it? My Grandmother used to can it for us all the time. Good stuff.

double-wrap in foil, then ziplock. Freeze. No worries.

dak- depends on whether you want to eat it, or grow a science project on it (as in some new life form maybe?) It'll last a long time in the fridge (weeks) vacuum packed, it'll last years in the frezer probably (never kept any past the "bad" point).
I don't know how long you've got in the pantry, but I wouldn't try to find out if I was you!
