Have been canning Smoked Salmon & Smoked Shad in BBQ sauce for a long time and most any BBQ sauce will work. The flavor of the fish will come thru and it will maintain a moist condition. Smoked fish seems to dry out some what when canned by it's self with nothing added.
If you want to experment you can put different BBQ sauce in each jar and label them to see which one you like the best. As I use 1/2 Pt or pint jars for my smoked fish.
