When is really fresh hate to mess with it much. Usually place butter and fresh lemon or lemon pepper on fish, place on aluminum foil and grill on My Traeger with mesquite or mesquite/hickory pellets. As for the fish that has been in the freezer or fridge for awhile (or I simply need a change after an Alaska trip) hard to beat mix of mayonnaise and Parmesan cheese. Coat top of fish with about 1/2 inch of mixture and again place on aluminum foil and grill.

charcoal grill, cedar plank soaked in water for a few hours, throw a whole fillet on with the skin side on the plank. Cover the fillet with white or red onion slices and fresh cracked pepper then completely cover with fresh grated parmesan cheese ..hickory briquettes are even better. delicious!

1/4 cup each of: orange juice, whiskey, soy sauce, brown sugar. Tbsp of minced garlic, chopped green onion. Marinate salmon fillets for 2-3 hours. Spray grill w/ BBQ Pam, place fillets on grill flesh side down, cook for approx. 4-5 minutes, turn (the fillet will release because of the Pam) now cook another 4-5 minutes skin side down and done. Skin will probably stick to grill, just slide the spatula between the skin and fillet.

First I remove the skin then I put a HOT/Sweet chili "seafood" rub on both sides. Heat the grill up to med/high heat. Oil up the grill and grill for five minutes per side. Next I drizzle 1-side with honey and flip it over and drizzle the next side. I continue to flip from one side to the other until I get the right char on both sides. The honey gives just the right amount of sweet to go with the heat of the rub.
