Default Looking for small batch sauerkraut recipes

A pickling book I have has recipes that call for 10/15 pounds of cabbage for sourkraut. Does anybody have a recipe for a smaller batch of kraut? I'm making it for myself so 10 pounds sounds like a lot of kraut.

Is it OK, to make the kraut in a plastic container?

Suggest you use agood ceramic type crock. Have been making saur krout for many years and it's simple to do. The Amount of cabage you use will shrink about 50 per cent after it is made to saur kraut.

Those are beautiful crocks. Any suggestions on a good size for a single person? I'm thinking of getting a 2 gallon or maybe 2 3/4 gallon, but maybe the 1.3 gallon would be plenty.....

After making kraut for years, I'd say stick with a ceramic crock (mine is 12 gallons) or buy one of the new smaller glass ones that come with an air lock you attach to the neck. Plastic is virtually impossible to sterilize.

It doesn't hurt to have it a little larger that what you think, You can alwys make a smaller amount in a larger crock, but you can't make a larger amount in a to small crock.
