Smoked salmon: ?
So I have a big chief and I am smoking some steelhead as I type, I only have two racks of fish on I put the bigger pieces in the bottom rack and the other, two racks up. Not much fish. So my question is when is it time to take off? Been on there since 8:30am it's going on 4.5 hrs. I know alot calls for 6-8 hrs or more. But since it's a light load should I cut the time in half?
