So I have a big chief and I am smoking some steelhead as I type, I only have two racks of fish on I put the bigger pieces in the bottom rack and the other, two racks up. Not much fish. So my question is when is it time to take off? Been on there since 8:30am it's going on 4.5 hrs. I know alot calls for 6-8 hrs or more. But since it's a light load should I cut the time in half?

MY is 5 hours is moist. 8 hours is way dry. I always check it along the way, thickness makes a big diff in the time.
1st off thanks for posting. And second I ended up going 4.5 then I took the skin off and then another 1.5. Vacuum packed and GOLDEN! Tried a couple experiments and they all 3 turned out great. I would of posted this somewhere else but this just seemed appropriate here. Thought more would post but you helped thanks again:-)
